Overal Tournament Rules

I am new to this site and was browsing about and i cant seem to find an ountline of rules. I'm guessing ya'll follow UPA regulation, but i am here to ask what kind of playtime you use, if you go to a certain score, or use a time clock. We have a little group that we play with on Sundays that is composed of highschoolers and i am looking to up our level of play so i began looking for groups like you guys, and am interested in the details so if you could let me know that would be awesome.

Playtime

Ultimate games are almost always played to a certain score. This is the general rule at pickup games (where we play for a awhile and then declare 'game to 9' in the last half hour the fields are available), leagues and tournaments. Now, knowing that a single point can take anywhere from 30 seconds to 6 minutes, we can't use scores only and in-fact use both.
I'll use our current winter league as an example. We have the fields for three hours and need to play two games. (A weekend tournament might have six to eight hours and need to play four or more games.) We allocate an hour and a half to each game and estimate how many points can be played in that time. As a result, we play two games to 13. Ten minutes (or so) before the time slot ends, we blow a horn and enter "soft cap". In soft cap, you take the higher of the two current scores, add 2 and the game is now to that score. With five minutes to go, another horn is blown and we enter "hard cap". In hard cap, you finish the point, if the game is tied, you break the tie; otherwise, it is time to get to the next game.
